Do you dream of a Head Chef position where you can help shape and future-proof a world-inspired gastronomic concept in Copenhagen? Then here’s a golden opportunity: LOCA Gruppen is now looking for a talented Head Chef to take our culinary concept at Dolores in Carlsberg Byen one step further out into the world.
Who is Dolores?
Dolores is Carlsberg Byen’s “world kitchen” – our restaurant opened in 2024 and is inspired by San Francisco’s colorful Mission District, where many food cultures meet and blend together. At Dolores, we serve flavor-packed comfort food with Danish vegetables in focus, fish from Danish waters, and dry-aged cuts – all prepared with respect for the raw ingredients, taste at the forefront, and plenty of inspiration from both near and far. A concept that has proven viable and has been well received by both guests and critics.
But in the long term, Dolores will be much more than just a restaurant: the restaurant in Carlsberg Byen is the beginning of something bigger – a concept in motion, a gastronomic playground, and a lifestyle. In the future, we envision the Dolores concept including breakfast spots, brunch, street food, takeaway, and much more. Carlsberg Byen is our gastronomic “test center” – and as Head Chef, you will play a key role in shaping and future-proofing the further development of Dolores
What we’re looking for:
We are looking for a Head Chef who truly masters the classical craft of cooking, while also daring to think beyond the traditional restaurant framework. As Head Chef, you will be an active part of our development team alongside Christian Hoffmann (Head Chef and Partner at Kilden in Tivoli) and Merete Holst, LOCA’s Owner & Head of Gastronomy – contributing both with new ideas and ensuring high quality in the execution of concepts.
This is a different kind of chef role. It’s not just about running a restaurant and cooking great food – it’s also about being a co-creator of the Dolores of the future, both as a gastronomic concept and a business idea.

Your responsibilities:
- Manage and lead the kitchen with confidence and high craftsmanship quality
- Implement and anchor new dishes and concepts in collaboration with the development team
- Help develop signature dishes and the gastronomic DNA
- Contribute actively to testing and developing new formats such as:
o Lunch & takeaway
o Street food and event solutions
o New business models
- Create a strong and inspiring kitchen culture, leading by example and ensuring both gastronomic and social sustainability as well as good working conditions for the staff.
We imagine that you:
- Are a trained chef – or have equivalent experience
- Have experience as a Head Chef or Sous Chef
- Are passionate about vegetables and plant-based cuisine – while not forgetting the bold flavors of meat, fish, and fermentation
- Have a strong grasp of techniques from, for example, the Middle East and Asia
- Have an interest in sustainability, organics, and health as a lifestyle
- Are curious, structured, and a strong leader
- Are excited by the thought of being a co-creator – not just an employee
